Virgin Extra Early-Harvest Olive Oil BIO 4L, also known as “prótolado,” is an olive oil of exceptionally high nutritional and biological value. It is produced from freshly picked unripe olives, has a bright green color, and its acidity does not exceed 0.5%. It is distinguished by its pleasantly bitter taste and is renowned for its antioxidant properties.
This is an Extra Virgin Olive Oil with very low acidity. Its unique characteristic is that it is produced on the very same day the olives are harvested. The olives are carefully hand-picked at the ideal stage of ripeness.
Early-harvest olive oil is produced from unripe olives. It belongs to the category of extra virgin olive oil and is obtained by pressing olives that have not yet wrinkled and still retain their vibrant green color.
The olives are harvested by hand in October and processed immediately. The beautiful, bright green color of the early-harvest oil is due to the chlorophylls of the unripe fruit, which have antioxidant properties. Early-harvest oil also contains vitamins, minerals, and polyphenols that help protect the body’s cells from free radicals. Its taste is more bitter than that of standard extra virgin olive oil, quite peppery, with strong fruity notes reminiscent of freshly harvested unripe olives.
Early-harvest olive oil is best enjoyed raw, so that we can fully benefit from its nutritional value and savor its intense organoleptic characteristics. It can be added to green salads, bean salads, boiled or roasted vegetables, as well as fish and seafood dishes.
